Delicate smoked trout on watermelon radish.
Smoked Trout spread
1 cup Smoked trout
¼ teaspoon Dill
¼ teaspoon Granulated roasted garlic
¼ teaspoon Onion powder
1 tablespoon Preserved lemon chopped fine
1 tablespoon jalapeño, chopped fine
A splash Table cream
¼ cup Mascarpone
Smoked Trout on watermelon radishes
3 good size watermelon radishes (cleaned and sliced)
Reduced Balsamic Vinegar for Drizzling
Salt and pepper to taste
Smoked Trout spread
1. Smoke Lightly salted cleaned fresh trout for about and 1 hour to 2. at 200 F. Making sure it does not dry out.
2. Debone trout making sure to get all the little bones. In a small bowl shred fish with a fork
3. Mix all ingredients together and adjust to taste.
This Trout spread is also good on savory crepes.
