Embarking on an across country drive with my life partner Lisa. Our driving trip in Portugal from the beaches of Fuseta in the south to the lakes in central Portugal was an incredible adventure that offers a unique blend of cultures, landscapes, and cuisines. Starting in Fuseta, we enjoy the stunning Moorish architecture, white sand beaches, and indulge in some of the freshest seafood in the world. The town’s traditional fishing heritage is evident in its delicious seafood, which is a must-try for any visitor.

As we headed towards the central region of Portugal, the landscape changes dramatically, resembling the rolling hills of central Texas hill country where Lisa and I grew up, but with the unique addition of cork trees instead of oaks. These trees are a significant part of Portugal’s economy and provide a tranquil settings. The region is also known for its wild game, hearty meats, and potatoes, which make for an excellent meal but not for the faint of heart most Americans.

Finally, it was time to point the rental Mini back towards Spain, taking in the beautiful scenery along the way. The route back provides an opportunity to explore the traditional Portuguese towns and villages and indulge in the local cuisine. Driving across the this country with Lisa was an unforgettable experience, offering stunning scenery, fascinating culture, and delicious food along the way, and the chance to create lasting memories together.


Portuguese Fisherman's Shrimp and Chorizo

Shrimp Mozambique with Chorizo


Shrimp Mozambique with Chorizo is a delicious and spicy dish that is perfect for seafood lovers. Here’s a recipe to make it at home:

Ingredients

1 lb raw shrimp, peeled and deveined
1 lb chorizo sausage, sliced
1 onion, chopped
4 garlic cloves, minced
1/2 cup olive oil
1 cup chopped cherry tomatoes
1 tablespoon paprika
1 tablespoon chili flakes
1/2 cup white wine
1/2 cup chicken broth
Juice of 1 lemon
Zest of 1 lemon
Salt and pepper to taste
Fresh parsley for garnish

Instructions

In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté until the onion is translucent.

Add chorizo sausage and cook until browned and crispy.

Stir in chopped cherry tomatoes, paprika, zest, and chili flakes and cook for an additional minute.

Add white wine and chicken broth and bring to a boil. Reduce heat to low and let it simmer for 10 minutes.

Add the raw shrimp to the skillet and cook until they turn pink and opaque, about 5 minutes.

Add the juice of 1 lemon and turn off the heat.

Season with salt and pepper to taste.

Garnish with fresh parsley and serve with rice or crusty bread.
